Who's cooking?
Meet Paddy Maher, the chef bringing Irish coastlines to the plate.
Paddy's spent over a decade in some of Dublin and London's best kitchens. He started out in Dublin, then moved to London, where he became Head Chef at Pearly Queen in Shoreditch and later Island in King's Cross. His food is flavour-first and doesn't try too hard. Technically sharp, but relaxed with it. The sea runs through everything he cooks, but that doesn't mean the meat and vegetables are an afterthought! Irish coastlines, British Isles produce, whatever's in season that week. Simple ingredients, done properly. Outside the kitchen, Paddy works with restaurants, events and food businesses on menus, concepts and private dining. He's the person you call when you want food that actually tastes like something.
